One of our head distiller’s favourite releases; a spiced and herbal gin which has been rested in ex-whisky barrels layering notes of oak and honey. A perfect sipping gin on the rocks or in complex cocktail favourites such as a negroni or an old fashioned. 

Nose: Spice, Sweet rosemary, juniper, and ginger.

Palate: Oak, sweet rosemary, ginger and honey

Build in a cocktail shaker & shake vigorously:

1 oz Barrel Aged Gin

1/2 oz Aperol

1/2 oz Lemon

1/2 oz Lime

1 oz Grapefruit Cordial

3 Dashes Aromatic Bitters

Matcha up To

Build in a cocktail shaker over ice, shake vigorously and strain into a chilled coupe glass

1.5 oz Barrel Aged Gin

1/2 oz Limoncello

1/2 oz Agave

1.5 oz Lime juice

1 Tbsp Matcha

Cayenne & Salt
